Roasted Carrot Puree

This easy side dish is delicious at any time of year. Even though it is extremely low in fat, it has a sweet, buttery quality that is amazing with roasted tomatoes, pork dishes and just about anything. It is especially delicious with my Summer Tomato Roast Chicken as it pairs beautifully with the acidic tomatoes and savory chicken. It can be made ahead and heated up. Not only that but, being that carrots are so cheap, it’s extremely budget friendly for both your wallet, and at zero smart points, your smart points budget as well. Enjoy and Happy Feasting!

  1. Preheat oven to 400 degrees.
  2. Lay a piece of foil on a baking sheet and spray with oil. Add cut carrots to pan, spray with oil and sprinkle with salt and pepper. Lightly toss. You may need multiple pans depending on the side of your sheet pan and the size of your oven. You don't want to put too much of the carrots on the pan and crowd the pan because you will loose out on all the caramelized deliciousness and that is really what makes this dish special.
  3. Roast carrots for 35 minutes until beginning to brown and soft all the way through (you should be able to easily put a fork through the pieces). About half way through the 35 minutes, take a moment and stir the carrots along with turning the pan in the oven to make sure there is even cooking.
  4. Once roasted, take carrots and add into food processor with the remaining ingredients and pulse until cheese is completely melted and mixture is fairly smooth. Season to taste.
  5. Serve warm and enjoy!
